Another New Year


Vacation no-schedule continues, which Mom the Cook finds exhausting.  Breakfasts often happen around noon, lunch at 3, dinner at 7, and great annoyance all the way around.

Family Burrito Night

  • black beans pureed in food processor, added to cooked turkey burger for Benson Burrito
  • plain beans made into burrito with salsa, cheese and kale, topped with homemade enchilada sauce.


First Tuesday, return to high school dinner

  • tacos.  Kid requires hard yellow shells.


Sloppy Joe Night

  • Once Upon a Chef sloppy joe using black beans for hamburger.  Tasted kinda like chili
  • turkey hamburger with canned manwich sauce
  • potato hamburger buns

  • butternut squash thai soup with red curry paste, coconut milk, and peanut butter and baby kales.
  • chicken
  • black beans  

tried Costco fresh pork potstickers.  Ling Lings are better.

2nd Wednesday--mashed potato cauliflower as anchor

  • 2lb braised chuck steak in apple cider and vegetarian broth, half an onion.
  • main course black beans in sauteed onion, garlic, baby kale, and 2teas enchilada sauce
  • mashed cauliflower and potato
  • shredded cheese
  • green salad: greens, carrot curls, pepperocini, bottled greek olives, sm. tomato wedges, homemade viniagrette

Happy New year

Had an awesome holiday week cooking with my extended family.
It's a little inspiration carrying me back home cooking just for us, our little family.

Ham fried rice
Red curry with cashews, bell peppers, onion, and spinach
Plain rice

Greek salad
Fasolada
French bread

Pork loin
Cattle beans sautéed in iron griddle with onion and garlic
Kale sautéed with apple and onion in butter and olive oil
Oven herbed potato cubes
Apple pie dessert. Light whipping cream doesn't whip

Shrimp fra diavolo
Cheeseburger on toast to hungry school kid earlier

Non-dinner: mushroom quiche

Finals week

Made pork loin again

Made ham fried rice again



Meatloaf or bean burrito
Kale side
Apple slices
French fries

MLK weekend
Vegetarian lasagna with goat cheese
Benson burritos with oranges as side
Roast Turkey. Roast cauliflower

Samosa Pancake

One recipe Jane Brody multigrain pancake.
Samosa filling inspired by maayeka.

olive oil
one onion diced
curry powder
ancho chili powder
one cup broth (Better than Bouillon vegetarian as usual)
One small cauliflower chopped
two cooked potato (in this case, eighths that were boiled)
some cheddar
3 cups leftover NYT lentil soup
chopped cilantro to garnish
salt

saute onion in spices
add cauliflower saute
add broth and cover; cook to soften
add potatoes and lentil soup; warm through
knock a bunch of cheddar cubes in, more or less by accident.
Keep warm while finishing pancakes.

To serve: put a pancake on a plate, top with samosa filling, and garnish with cilantro.

Monday: Split Vegetarian Taco/Burrito Bar
Leftover seasoned black beans, Ground Beef with Alton Brown Taco Potion #19
White flour tortillas, shredded cheddar, romaine lettuce, Pace picante sauce
fresh pineapple, pomegranate

Tuesday: baked potato.  Toppings broccoli, black beans, cheese sauce
