The Dinners We Eat Most Often.


After I'd lived here about a year, and wanting to spend less time cooking, I settled on the family favorites that are straightforward to make.

Beans

homemade chili, perhaps with Baked potato
Burrito of homemade beans, cheese, tortilla, spinach and salsa
Red Lentil Dal with Naan or Tortilla or pulao rice, and a green salad

Fish

Skillet or baked fish, served with rice or quinoa, and a vegetable like sauteed spinach
Baked Steelhead Trout (or Salmon)
Tuna Croquet seasoned like crabcakes
Tuna Melts; sometimes in the style of "Hot Hoagie."
Salade Nicoise

Vegetables with Cheese

Enchilada with homemade sauce
Homemade Pizza (dough recipe from Silver Spoon Cookbook)
Grilled cheese with Tomato Soup
Vegetable Pot Pie (of yam and kale)
Vegetable Pot Pie (of mushroom, lentil, leek, and potato, with dragonwagon gravy)
Vegetarian Lasagna based on this.
Spaghetti Squash fritters


Vegetable Without Cheese

Thai curry with vegetables and tofu, served over rice or quinoa
Crescent Dragonwagon's Vegetarian Gravy, perhaps over Noodles or Mashed Potato
