- 3 tablespoons extra virgin olive oil
- 1 yellow onion, diced (about 1 cup)
- 4 cloves garlic, minced
- 1 pound butternut or kabocha squash as the pumpkin, peeled and cut into 1-inch cubes (about 2 cups) ==or Johnna thinks it's easier to roast the squash in the oven, the scoop out the meat. I hate peeling winter squash.
- 1 (15-ounce) can diced fire-roasted tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon ground coriander
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 3/4 cup vegetable broth (such as Better than Boullion)
- 1 cup fresh or frozen corn kernels
- 3 cups Scarlet Runner Beans, already cooked. (or more beans, so it's equal to the pumpkin?)
- 2 cups chopped greens (such as spinach or kale)
- Parsley or Cilantro to decorate the top.

- Roast the squash the day before
- Cook the beans the day before. I can cooked the beans Wednesday night after we arrive. I'll probably cook a pound which makes 7 cups. I can put any leftovers into burritos later.
- Saute onions for 5 minutes
- Add garlic and saute a minute more
- Add canned tomatoes, tomato paste, spices and salt, and broth. Bring to boil and cook 15 minutes to remove the canned taste of the tomato.
- While the tomato sauce is cooking, Remove meat from squash and chop/scoop into bite sized chunks.
Add the Three Sisters: Squash, Beans, and corn. If adding kale, add it now, if spinach add it at the end.. Cook another ten minutes on the stove to make hot through.
- Presentation ideas:
- Simple: serve hot Three Sisters in a bowl-type serving dish, topped with cilantro. This is my preferred way to go.
Fancy: Make a cornbread batter, bake Three Sisters in casserole dish topped with cornbread for 20-25 minutes until cornbread is cooked. But, we already have cornbread stuffing on the table, so this doesn't make sense.
Theatrical. Serve in a roasted whole pumpkin. Or in small individual roasted pumpkins. If serving in pumpkin, reduce or eliminate squash from mixture above.
